Preparation

Preheat the oven to 400°F (200°C).

In a medium skillet over medium heat, cook the chorizo, using a spatula to break it up, until browned and cooked through, about 6–8 minutes.

Add the diced onion and minced garlic to the skillet, and sauté until the onion is translucent, about 3–4 minutes.

Add the roasted and sliced poblano peppers to the skillet, stirring to combine.

In a large ovenproof dish, layer half of the chorizo mixture, followed by half of the Monterey Jack and Oaxaca cheese. Repeat with the remaining chorizo mixture and cheese.

Bake in the preheated oven until the cheese is fully melted and bubbly, about 10–12 minutes.
