Preparation

Make the meatballs by placing mushrooms, onion, cabbage, chives, garlic, and ginger in a food processor. Pulse until finely chopped and combined.

In a large bowl, mix pork, beef, egg, cornstarch, soy sauce, mirin, fish sauce, sesame oil, salt, pepper, and mushroom mixture. Form into 6 meatballs and chill for 20 minutes.

Heat oil in a skillet over medium heat. Cook meatballs until browned on all sides, then add water, cover, and cook until done. Remove meatballs and set aside.

Bring a pot of water to a boil. Cut wonton wrappers into noodles and boil until soft. Transfer to ice water, then drain.

In the same skillet, whisk together sauce ingredients and reserved noodle water until smooth. Cook over low heat to form a glossy sauce.

Toss drained noodles in the sauce until coated. Remove from heat.

Serve noodles in bowls, topped with meatballs, remaining sauce, and garnish with cilantro.
